To satisfy Jen’s carb-loading needs for the following day’s Ironman 70.3 Boise race, we headed to dinner at Alavita in downtown Boise. Turned out to be a great choice! This Italian restaurant features local ingredients and, best of all, home-made pasta. We started off sharing a baby lettuce salad with pistachio and Idaho Bartlett pear vinaigrette that had some of the freshest ingredients we’ve tasted in a restaurant salad. Christopher ordered a seemingly simple angel hair pasta that was anything but. With sun-dried tomatoes and Gorgonzola, it made for a delicious dish that we’ve now mimicked at home. Jennifer ordered salmon over squid ink linguine that was equally good. We finished off the meal with a scoop of gelato. A great ending to one of our favorite meals of the year.
