In keeping with tradition from the past few years, we celebrated the arrival of the new year with a home-cooked meal, drinks, and friends. Cody and Leslie kindly hosted, with Nicole and Stephen flying in for the festivities, and Leslie’s friend Rebecca also joining. We had settled on a Caribbean-themed menu, with everyone pitching in to help with the food preparation and cooking. For appetizers, we started off with mango salsa and chips, peel-and-eat hot pepper shrimp, and lime onion rings with spicy dipping sauce. For the main course we had mahi mahi filets wrapped in banana leaves, with sides of black beans, fried plantains, and a cooked vegetable salad. Throughout the night our thirst was quenched with a constantly refilled supply of mojitos, beers, and wines. For dessert, Leslie made a delicious key lime pie, which was served just in time for us to crack some bottles of champagne, grab poppers, and ring in the new year. Happy 2013!
