It’s not exactly peach season, nor is the weather exactly warm…but that won’t stop us from some yummy fro-yo. This recipe was inspired from one in David Lebovitz’s The Perfect Scoop, a book we “borrowed” from ckh’s friend (and haven’t yet returned). We were flipping through the book and the simplicity of this one attracted us.

Peach Frozen Yogurt
2 lbs frozen peaches
3/4 cup water
3/4 cup sugar
1 3/4 cups low-fat plain yogurt
a few drops of lemon juice

Cook the peaches with the water in a medium saucepan over medium heat. Once the mixture is simmering, add the sugar. Stir occasionally until soft and cooked through, about 10 minutes. Remove from heat and chill in a cold water bath or the refrigerator.

When the peaches are cool, puree in a blender with the yogurt until smooth. Mix in a few drops of the lemon juice.

Freeze the mixture in an ice cream maker.
