Madeleines are one of my mom’s favorites. I wanted to take a baking break in the afternoon and the ingredients for these cookies were readily available. Preheat oven to 375 degrees F. Melt the butter completely and allow to cool. Grease a madeleine pan. Sift together flour and baking powder and set aside. Using an electric mixer, beat the eggs and sugar for 5 to 7 minutes until thick and creamy. Gently fold in the lemon juice and vanilla extract. Beginning with the flour mixture, alternately fold in the flour and melted butter in batches. Refrigerate the mixture to stand for 30 minutes. Carefully spoon into the madeleine pan, using small amounts as dough expands during baking. Bake for 12-15 minutes until cookies are firm to the touch and edges are turning golden brown. Turn out onto a cooling rack. Dust with confectioners sugar before serving. |
